Christmas Grape Salsa
Based on the red grape salsa recipe from Lesley Stowe here: https://www.lesleystowe.com/recipes/grape-salsa/
1 cup red grapes, quartered
1 cup green grapes, quartered
¼ cup minced shallots
¼ cup white balsamic vinegar
1 small serrano or Thai chili, seeded and finely minced
2 Tbsp honey
2 Tbsp finely chopped fresh tarragon (or 1 Tbsp dried tarragon)
2 Tbsp olive oil
½ tsp sea salt
8 oz Cambozola
Toss all the ingredients together and let stand for at least 15 mintues. Bring Cambozola to room temperature before serving together with Pecan, Raisin and Rosemary Crackers.
