Holiday Cookies 2 (Laura’s Savoury Spicy Cheese Pastries)

This recipe comes via my good friend Laura’s kitchen (she makes very yummy things).  It was one of the recipes we made on our cookie day. These are lovely, savoury bite sized pieces that melt in your mouth. They require restraint lest you have a Cookie Monster moment. I am eating them for breakfast as I write and since the kids are still in bed…there is no one to stop me mwa ha ha.

Ingredients:

  • 1 1/2 c. flour
  • 1 c. toasted pecans
  • 1 c.  shredded sharp cheddar cheese
  • 1 /2 c. well chilled butter cut in small pieces
  • 2 egg yolks
  • 1/4 tsp tabasco
  • 1/4 tsp salt
  • 1/8 tsp cayenne

Method:

  1. Preheat oven to 425 F
  2. Blend ingredients in a food processor until dough forms. Take half the doug and turn onto a lightly floured surface. From into a 1 1/2″ cylinder. Wrap in plastic wrap. Repeat for the remaining dough and chill the lot for at least 4 hours or pop it in the freezer until you are ready to bake them off.
  3. Slice into rounds about the width of your pinky finger (do not slice finger…wouldn’t want you getting a Darwin Award now would we?)
  4. Place on baking sheet lined with parchment about 1/2″ apart and bake for 10 minutes. If the dough is coming out of the freezer, cut into rounds and then let the rounds stand at room temperature before you bake them.
  5. Serve warm or at room temperture.

Makes 4 dozen.

They are fabulous and Laura says they pair nicely with Prosecco…we were drinking mulled wine and I thought they paired pretty well with that too thank you very much and thank you Laura. I think baking day needs to become an annual tradition.
