Pannukakku (Finnish Apple Pancake)

This is a recipe from the old country (Finland) that my mother makes. My kids love it. I made it this morning for breakfast in my monster cast iron frying pan.

Ingredients

  • 1 large apple quartered and sliced thinly (or more if you like lots of apple). I should have used a second apple.
  • 2 Tbsp melted butter
  • 6 eggs
  • 1 c milk
  • 1 tsp vanilla
  • 2/3 c flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Cinnamon sugar for sprinkling (1:3)

Method

  1. Preheat the oven to 425 F.
  2. Melt butter in large oven proof frying pan (or you can make it in a 9 x 12 glass baking dish).
  3. Add the apples and toss to coat. Bake the apples for 5 minutes.
  4. While the apples are baking, whisk together the eggs, milk, vanilla, flour, baking powder and salt until you have a smooth batter. Remove pan from oven and pour the batter over the apples.
  5. Sprinkle liberally with the cinnamon sugar and bake for 20 minutes or until the pancake is puffed and browned.
  6. Serve immediately plain or with maple syrup or whatever you like on your pancakes.

Makes 8 servings.
